I tried a new Shiraz, last night. New for me.
Yellow Tail Shiraz. Made in South East Australia. Aren't most made in NSW?
Anyway, it's the singlemost instantly-drinkable Shiraz I've ever tried. Not a harsh note in it.
Lovely. Almost Lambrusco smooth.
So I had a couple small glasses of it and promptly put the air-removing cork thingy in the bottle and refrigerated it overnight. Tonight I tried it again. It didn't sit well over the 24 hours. Little hints of vinegar in the mix. Ack!
So, if you seek out this delicious red, drink it. Don't try to keep it in the as-my-great-grandmother-said icebox.
And remember, most Shiraz likes to breathe a bit before it's poured.
